Stacey here… this Family Cook Book was originally collected and printed several years ago. I gave the collection as Christmas gifts. The ever increasing family and friends asking for copies, as well as, more and more new recipes being shared, has sent me fleeing to the web as a family resource. My family tree and all of our connecting branches, have a long love of food and recipes. If you have stumbled upon us by accident, you are welcome to use a recipe. Our recipes have been collected over many years from many different sources - I strive to give credit where credit is due.

Three Pestos


Pesto is great tossed with any pasta, or try using it as a marinatde for grilled shrimp
or vegetables


Traditional

    2 cups    Fresh Basil Leaves, tightly packed

  4 cloves    Garlic, peeled and chopped

   1/3 cup    Pine Nuts

      1 cup    Fresh Parmesan Cheese, grated

    ¾ cup    Olive Oil

                  Salt & Pepper         

Process basil, garlic cloves and pine nuts in a food processor until finely ground.  Add the cheese and process until well combined.  With the motor running slowly pour the olive oil through the feed tube.

 

Southwestern

    2 cups    Fresh Cilantro, packed

  4 cloves    Garlic, peeled and chopped

   1/3 cup    Pine Nuts

             1    Chipotle Chile in Adobo

    ¾ cup    Olive Oil

                  Salt & Pepper         

Process cilantro, garlic cloves, pine nuts and chipotle in a food processor until finely ground.  With the motor running slowly pour the olive oil through the feed tube.

 

Asian

  cups    Fresh Basil Leaves, tightly packed

    ½ cup    Fresh Cilantro, packed

  4 cloves    Garlic, peeled and chopped

     1 stalk    Lemon Grass, chopped

        1 Tb    Fresh Ginger, grated

    ½ cup    Sesame Seeds

     ½ tsp    Chile Paste

    ¾ cup    Vegetable Oil

                  Salt & Pepper         

Process basil, cilantro, garlic cloves, lemon grass, ginger, sesame seeds and chile paste in a food processor until finely ground.  Add With the motor running slowly pour the olive oil through the feed tube.
